However, it is recommended thatthis unit be completed before students are assessed for Outcome 3.It may not be possible for some students to complete some of the tasksin a written form. Using a flip chart may be a more suitable form ofrecording answers, provided all students participate in the discussions.True/false questions could be read to the students and answers thencircled by the students on their sheets.Training materialThe Royal Environmental Health Institute of Scotland (REHIS)has several useful books, leaflets and overheads. Two recommendedtitles are the course handbook for their Introduction to Food Hygienetitled The Essentials of Food Hygiene: A Guide for Food Handlers;and the handbook for their Elementary course titled The Food HygieneHandbook. Both can be purchased from REHIS.For further information for those teaching this unit it might also behelpful to read the REHIS Intermediate Food Hygiene Handbookalthough there is more in this publication than is necessary for teachingthis unit.REHIS have overheads (these can also be purchased for Power Point)and these are cheaper than the Highfield ones (see below).

They also have a large number of leaflets and otherpromotional material that can be ordered free, including a video called‘Bacteria Bites Business’. It is worth while visiting this website.Another excellent site with a lot of free material to download as well ason-line quizzes is www.foodlink.org.uk They also have free leaflets ona variety of hygiene-related topics that can be ordered.Highfield Publications at www.Highfield.co.uk have extensiveresources such as videos, overheads and books along with otherideas. Their site is worth a look. Their overheads are very good butexpensive. Not all of the overheads would be suitable for use with thisunit but they would be useful at the next level. These can also bepurchased for PowerPoint.Much of the Highfield material such as videos and overheads can beused for other hygiene units and the expense is then not so prohibitive.Recommended videos are ‘Start Right – The Essentials of FoodHygiene’ and ‘Food Hygiene, the Movie 1 and 2’. All of these can bepurchased through Highfield Publications. Most suppliers will sendbooks and videos on approval so it is worth having a look at some ofthem (especially the videos) to see what would be most suitable foryour classes. Highfield have the best range of materials to purchase, ifa bit expensive.
