Reflection about bread and pastry

Artisan Bakery Discovery Assignment.

We have spent the past couple of weeks looking at ARTISAN Breads and various ways of seeing and thinking about what exactly the term ARTISAN means within the craft of Baking and Pastry Arts.

This assignment is designed to help you to help you to start to formulate your own ideas about what it the term ARTISAN means to you.

The first step is to spend some time online doing some research about various artisan bakeries from anywhere on the globe. We have been discussing Artisan Bread specifically so far but if your absolute passion is another avenue of Pastry Arts (maybe Cakes, or Viennoiserie, or Restaurants) you can focus on a pastry shop or other business that specializes in something other than bread. Most of the same ideas and ethos apply to most artisan crafts from all disciplines.

Once, you have found a few bakeries that reflect your own passions please narrow it down to the one that really stands out to you as a reflection of the dream ARTISAN bakery or pastry shop you could envision yourself in in the future.

Most bakeries have websites, social media and traditional media pieces that give great insight into what drives the business, what values the company or person holds dear and what makes it unique. Dig as deep as you can to formulate a strong sense of what ARTISAN values the business you have chosen focuses on.

Please include and answer the following questions regarding the Artisan Pastry Operation you choose to investigate:

1. The name and web link to the business that you are showcasing.

2. A brief description of what they business specializes in, where they are located and the history of the business.

3.. What ethos, values or practices does the person or business practice that stands out to you and aligns with your own personal vision of make it means to be an Artisan.

4.. Can you identify something that this business represents that you might strive to adhere to as you grow as an artisan and pastry chef.

There are no right or wrong submissions here, just personal reflections. I will create a page that outlines all the submissions with weblinks so that we can view the submissions of our fellow classmates and all share in gaining knowledge from one another and discovery all the unique and interesting businesses that get showcased.
